Aside from growing up in the store, Tim Mahshi has seen first hand what it takes to work hard at running Byblos Cafe as his parents were the original founders back in 1989. Tim would run food as a young boy so when the time came to sell - he naturally was ready to move on. JT Reed would not let Tim slip away and instead kept him on the team as part owner.


Pedram had dreams of owning a Persian / Mediterranean restaurant as his roots in culinary and his memories of food ran deep as a child. He loved the idea of a fusion restaurant, bringing in the best of the Middle East under one roof. These dreams came true when he was hand selected to work side by side with Tim to bring Byblos to life and to carry on the traditions of the decades old brand.


Events Director for nearly a decade at sister restaurant Bosscat Kitchen and TEN Sushi + Cocktail, Susan has a knack for event'ing. Susan loves the intimacy of Byblos Cafe and bringing an event to life for a happy customer. She'll stop at nothing to make sure everything goes off without a hitch!


Charlene has been working under Executive Chef Peter Petro at sister restaurant Bosscat Kitchen for years. To Charlene it was a fun diversion from the American comfort food she was used to creating and perfecting to step over to Byblos Cafe and give the menu a refresh. She has had a hand in the updates on the menu, as well as the new brunch menu set to be released Spring 2024.
